The company adheres to the corporate tenet of "We do not produce medicines, but help pharmaceutical companies make good medicines".Ascorbate oxidase is an enzyme that catalyzes the oxidation of ascorbic acid (vitamin C) to produce dehydroascorbic acid. This enzymatic reaction is part of the ascorbate-glutathione cycle, which is involved in the regulation of cellular redox balance and the metabolism of ascorbic acid in plants, fungi, and some animals.
The enzymatic activity of ascorbate oxidase results in the conversion of ascorbic acid to dehydroascorbic acid, a process that plays a role in the turnover and regulation of ascorbic acid levels within cells. Dehydroascorbic acid can subsequently undergo recycling back to ascorbic acid through enzymatic and non-enzymatic mechanisms, contributing to the maintenance of ascorbic acid levels and redox homeostasis.
In addition to its physiological function, ascorbate oxidase has practical applications in various industries, including food and beverage processing. Its ability to oxidize ascorbic acid makes it valuable in the development of food products, as it can be used to control the browning of fruits and vegetables by reducing enzymatic browning reactions that are mediated by ascorbic acid.
Overall, ascorbate oxidase is an enzyme with important roles in cellular redox regulation and the metabolism of ascorbic acid. Its enzymatic activity contributes to the turnover of ascorbic acid and has practical applications in the food industry for controlling enzymatic browning processes.

Description | Ascorbate oxidase (AO) is a cell wall-localized enzyme that uses oxygen to catalyse the oxidation of ascorbate (AA) to the unstable radical monodehydroascorbate (MDHA) which rapidly disproportionates to yield dehydroascorbate (DHA) and AA, and thus contributes to the regulation of the AA redox state. Ascorbate oxidase is useful for enzymatic determination of ascorbic acid and for eliminating the interference of ascorbic acid in clinical analysis. Effect of Various Chemicals on Ascorbate oxidase. |

Uses | Biochemical research. |
Uses | Ascorbate oxidase, from Cucurbita sp., may be used to study oxidative stress and heat stress response and tolerance. Also used in ascorbic acid assays to study the heat stress response of Arabidopsis and useful for enzymatic determination of ascorbic acid and for eliminating the interference of ascorbic acid in clinical analysis. |
Definition | An enzyme found in plant tissue that acts upon ascorbic acid in the presence of oxygen to produce dehydroascorbic acid. |
General Description | Ascorbate oxidase is a homodimeric enzyme, which comprises 552 amino acid residues per subunit (zucchini). It corresponds to a molecular mass of 70kDa per subunit. This enzyme is mainly found in plants, fungi and eubacteria. |
Biochem/physiol Actions | Ascorbate oxidase (AO) participates in cell growth by regulating reduction/oxidation (redox) of the apoplast. This enzyme can synthesize the oxidative molecule dehydroascorbate acid (DHA) in the apoplast. It is also involved in cell elongation and enlargement development. |
