Product Description

Protease from Aspergillus saitoi is an enzyme derived from the fungus Aspergillus saitoi, belonging to the class of proteolytic enzymes. This protease is capable of breaking down proteins into smaller peptides or amino acids by hydrolyzing peptide bonds. It finds applications in various industries such as food, detergent, pharmaceutical, and textile, where it is utilized for its protein-degrading properties. In the food industry, it is used for meat tenderization, flavor enhancement, and the production of protein hydrolysates. Additionally, protease from Aspergillus saitoi is employed in the manufacturing of laundry and automatic dishwashing detergents to aid in the removal of protein-based stains.

Application

Protease from Aspergillus saitoi has been used in a study to assess sequence coverage and resolution in hydrogen exchange of large proteins. It has also been used in a study to investigate the conversion of soybean curd isoflavone glycosides to their aglycones through β-glucosidase.
